SALADS DON’T HAVE TO BE BORING

Alright now those of you who have been following my blog for anytime at all should have already realized that I am quite the queen in the kitchen.

I seriously think I outdid myself today on my salad. I must admit, though, that I got the inspiration from lovely daughter.

She makes the most delicious salads ever and I almost drool over hers.

So I noticed I had some romaine in my fridge and I just bought some asparagus and I had some chicken breasts defrosting in the fridge.

Then last week I got a wild hair and decided to buy some Mama Chia Blueberry Hibiscus juice in six little bottles. That juice was a bit more expensive than gold, I believe, so I just take little sips of it at a time. I don’t really like the taste that much, so the little sippy stuff slides by me just fine.

Since I am a financially bereft writer and since I spent way too much money on that Mama Chia drink stuff, I decided I had better find a way to use that juice and make it a bit more tasty. Those of you who are in business would identify that as a ROI (those of you not in business ROI is the abbreviation for return on investment.;))

So tonight I put a bit of olive oil in my cast iron skillet and put that chicken breast in the oil. I then poured a bit of that Mama Chia juice over the chicken breast and then drizzled some honey over it. It had cooked a bit when I decided I wanted that chicken to soak up just as much of that honey and Chia drink as it could, so I sliced it in the skillet and stirred it around a bit. It was looking yummy!

In fact I don’t know why I didn’t marinate it in the yummy. But I sure as shooting am going to do that next time I make this salad!

Then I cut up my romaine lettuce into bite size pieces because if there is anything I hate it is a piece of lettuce that is too big to fit in my mouth. Then I snapped the ends off of my asparagus which was my new discovery in vegetables a few years back. I swear I love asparagus so much I am going to figure out how to slip it into brownies. Then I will become a millionaire because I will be making everybody healthy while they eat what they think is brownies when really it is just asparagus swimming in moist delicious brownies. (Okay now you can stop rolling your eyes and furthermore you will be the last in line to get my asparagus brownies, so there!)

While the chicken was swimming around in the yummy, I proceeded to throw the rest of my salad together. Romaine lettuce, diced asparagus, sliced carrots, sunflower seeds, a couple of teensy bits of dried mango and some slices of dried papaya then a bit of that nutty fruity mixture stuff they sell at Walmart, a few croutons and I was just about to drench it in dressing when I stopped myself. There was enough yummy in the bottom of that skillet that once I plopped that chicken on my salad I could scoop the yummy out of the skillet and drizzle it on my salad.

I am telling you this was over the top delicious and about the most healthy thing a person could eat at least until I get that Asparagus Brownie recipe figured out. lol
