I can not give you an Easter basket, nor can I feed you all a scrumptious Easter meal, yet I so want to bless you this Easter so I am giving you a recipe that has attained legendary status in my family.
I believe I got this recipe from a grocery store display. It uses Pillsbury cinnamon rolls so I think it was from a Pillsbury flyer.
I have made this recipe for my children, my parents, my boyfriend and other friends and not a single complaint has been lodged.
The taste is exquisite but the time it takes to prepare is minimal. For single parents what more could you want from a recipe?
So here you go:
This is Gracie’s Recipe for an Awesome Coffee cake.
Ingredients:
1/2 cup butter melted.
2 cans Pillsbury refrigerated cinnamon rolls (I recently used the Grands kind with caramel icing which blew the yummy quotient out of the roof!)
1 package COOK AND SERVE vanilla pudding.
1/2 cup firmly packed brown sugar
1/2 cup butterscotch chips (the original recipe used chocolate chips but I prefer butterscotch. You can use whatever you want though.)
Heat oven to 375.(I usually heat it to 350 so it cooks more evenly. My oven also is a bit hotter than what the temp says it is, so use your best judgement dears)
Using 1 T of the butter generously grease a bundt pan. (I use all of the butter for the recipe and use cooking oil spray to grease the pan. Just saying…)
Microwave the rest of the butter until melted.(Or until you have to wipe it off the interior of your microwave because we all know butter explodes all over the microwave if you don’t keep an eye on it and take it out exactly at the right time. If the butter explodes you have to start all over again folks. At least with the butter melting task. :))
Separate the cinnamon rolls and place one layer of rolls in the bottom of the bundt pan. Sprinkle with half of the brown sugar and half of the pudding mix and the butterscotch chips. Then drizzle half of the butter over that layer and repeat the layers.
I cook mine for about half an hour. It is smart to rotate the bundt pan about halfway through and also change the oven shelf that the pan is on. Like for instance if you had it on the lower shelf for the first fifteen minutes then switch it to the higher shelf and rotate it 180 degrees for the second fifteen minutes.
When you get it out of the oven I suggest running a knife around the edges and then put a plate in the top of the bundt pan and turn it over so that the awesome coffee cake is now on the plate. If you want to you can warm the icing in the microwave although the icing has the same difficulty as butter has so be careful and then drizzle the icing over the cake.
